Learn to make no spread cookie dough, and master royal icing. We will make different consistencies of royal icing, color royal icing, and practice piping and flooding. You will take home unbaked cookie dough and royal icing to use at home at a later date. Many people attend this class on their own and many questions are asked. You do not need to take this class before taking Level 1 Cookie Decorating.

Pizza from scratch may seem like a daunting task, but it's not as difficult as you may think! In this class you will make your own pizza dough using sourdough discard to amp up the flavor, Neapolitan pizza sauce, and make and bake your own pizza. Starting out with a glass of wine and a salad, Chef Joy will lead you through mixing and kneading your own batch of pizza dough and the baking process. Each duo will make 1 savory pizza and 1 dessert pizza. Mangia Mangia!

In this class you will learn to fill a graham cracker cake with chocolate ganache, and cover the cake in vanilla bean swiss meringue buttercream. For the outside of the cake we will paint on pillowy swiss meringue and torch it for beautiful results. This class would make a great date or ladies morning out!

Professional Training Program Fall Session 2025

Our professional training program was created for individuals looking to transition careers, self-taught bakers seeking a structured education without the time and financial burden of pastry school, and those whose work schedules prevent them from attending traditional programs. Over the years, this program has flourished into an inspiring, collaborative educational experience that we're proud to offer our community. Classes are held on Tuesday and Wednesday evenings from 6:00-9:00 PM. August 12th - October 29th 2025. Please note, the 'registration price' is the deposit for the Program.
