Mardi Gras King Cake

Celebrate Mardi Gras just a bit longer this month by learning how to make a traditional King Cake! King Cake was brought over by European settlers to the US and is a popular treat in New Orleans during the Mardi Gras season. You will learn how to make a buttery sweet yeast dough with a Pecan Praline filling and topped with a Vanilla sugar glaze and colorful sprinkles. Per tradition, we'll also stick a good luck token inside the cake. While the cake is baking, we'll make a Vanilla Crème Anglaise sauce.

In this hands-on class, we will make macaron shells with the Swiss Meringue method and pipe them in pastel circles. As part of our wine week, we'll make a Rosè Prosecco Buttercream filling and a Prosecco Gelèe. We'll also have some vanilla buttercream on hand. You can garnish your macs with mini Prosecco bottles and edible glitter.

Our professional training program was created for individuals looking to transition careers, self-taught bakers seeking a structured education without the time and financial burden of pastry school, and those whose work schedules prevent them from attending traditional programs. Over the years, this program has flourished into an inspiring, collaborative educational experience that we're proud to offer our community. We teach a wide range of skills ranging from cake and cookie decorating to laminated and yeasted doughs and classic French pastries. Classes are held on Monday and Tuesday evenings from 6:00-9:00 PM. August 10th-October 27th, 2026. Please note, the 'registration price' is the deposit for the Program.
