About This Class
This workshop spans Friday night and Saturday morning, during which you will learn to make laminated dough for classic croissants, pain au chocolat, and almond croissants, as well as a French classic, Paris Brest using choux pastry, and praline cream. To ensure the best possible experience and accommodate the available equipment, the class size is limited to 6 students, allowing Chef Joy to provide personalized guidance. 2-Day Classic Croissant and Paris Brest Workshop Join us for this immersive two-day workshop where you’ll master the art of crafting buttery croissants and the Paris Brest. Day 1 (Friday, 6–9 PM): Dive into the fundamentals of croissant-making. Learn how to prepare the dough, create the butter block, and laminate the dough to perfection. You’ll also prepare fillings for pain au chocolat and almond croissants. (Approx. 3 hours.) Day 2 (Saturday, 10 AM–3 PM): Bring your croissants to life by rolling, shaping, proofing, and baking them. While the dough proofs, we’ll shift focus to pate a choux, and praline cream to bring the Paris Brest to life. There will be a lunch break to allow for proper proofing and baking time. Each student will leave with a box of freshly baked croissants and Paris Brest to enjoy. Don’t miss this chance to elevate your pastry skills!
